The wine is because the gears on the car are straight cut instead of rounded for strength. This is just like when u reverse and you hear a whine that gets louder as you get faster. Thats because reverse gear is straight cut.

This video is as old as the internet. Still pretty cool though. And it is an E36, look at the dash and the little picture at the beginning of the vid. If I remember correctly it's an ex-Supertouring 320i from BTCC or ETCC or some other series.
