Does anyone happen to know the torque that should be applied to the shock tower nuts on an M after installing a strut brace?

Those self locking nuts are one use only. If you're going to re-use them, apply some blue loc-tite on them first.

The BMW strut brace instructions specify 35Nm = 26 ft-lbs. The OEM strut brace also comes with replacement nuts that have blue-locktite pre-applied.

Interesting...Strong-strut instructions for the Z4M call for only 20 ft-lbs...are they just being overly cautious?

If you do a search on Google or, god forbid, Roadfly, on E46 M3 strut nut torque spec, you'll see that there's been long threads and discussions when the E46 M3 strut brace first came out, everyone was getting it and the torque spec was 25Nm which equates to 18ft-lbs. Unless BMW changed the specs for the Z4 (doubt it), there shouldn't be any significant deviation from that.

I can look it up in the TIS when I get to work on Monday.

I have also seen this info on E36 M's that shows a lower torque of 27Nm: http://www.bimmerfest.com/forums/showpost.php?p=1663997&postcount=1.
