I'm thinking about a headgasket and all that entails, oil pan gasket and what else? Dunno what the problem areas of m10s are.

all fresh gaskets & seals would be nice, but not a neccessity if the motor is in good condition (you should be able to easily spot any leaking gaskets/seals with the motor out).
However, one item that is somewhat common to leak after a lot of miles is the rear main seal, so you may want to at least replace that.

Rear main in the tranny or motor? I'm assuming motor. I'll check that.

Motor has been sitting for a while, so it needs a ton of gaskets.

How do these waterpumps hold up? I'm thinking about doing that and the T-stat while it's out. I found the coolant drain plug on my block was broken. I pulled 1/2 of it out. :mad

Need to go to sears and get some easy-outs.

Yep, on the motor...the seal is pressed into an aluminum housing that bolts to the rear of the block (you just need a suitable drift to push it out)

The waterpumps are typically very reliable...the main thing you'll want to check is for play in the shaft. If you're not on a tight budget, you may as well replace it...especially if it's been sitting for a while.
What year 320i is it? The early & original water pumps used stamped impellers that look like they don't perform as well as the later cast impellers.

And, if you're after a little more cooling, pickup an early E30 318i water pump & pulley...that pulley is the smallest of all m10's but it won't directly bolt-on to the earlier style m10 water pumps due to it's rectangular bolt pattern.

Repaint the engine bay....

My engine bay doesn't need a repaint. When I get it home and the motor out of the good chasis I'll take pictures. This thing is MINT except a tiny tear on the drivers seat and the chrome seals around the front and rear windshield.

Even the AC still works. :devillook

I work at a BMW dealership so parts are cheap and I have access to all the special tools and such, so a rear main isn't a big deal. What year should I look for the upgraded waterpump and Tstat? The girl that sold it to me said if you have the AC full blast it will overheat a bit, so extra cooling would be nice. It's an '82.

get a water pump & pulley for a 84-85 318i....and using a 71* thermostat might help out too.

What car had the 71 degree thermostat, or is it aftermarket?
