Im thinking of maybe selling my m3 i hardly ever drive and getting a convert. How do they drive and handle compared to the coupe or sedan?
I might want to find a beat to shit one and rebuild it putting all the mods i want on i, but i dont know if it would be worth it, what do you guys think? Im also thinking about a miata

Its all relative, generally they will be heavier than a coupe or 4 door sedan.
It will flex more too, and sometimes leak when it rains, but on a nice clear day, nothing brings more joy than driving with the top down.
Beat to shit?? not a good idea, try to find an M3 vert, so you dont need to add a lot of performance right away.

If I could afford the insurance, I'd try to grab an M3 vert while there are still some un-totaled ones left. (Seems like I read about another M3 being totaled every week in the e36 section.) If you don't want the insurance premium, and you like wrenching, you can get a 328 and do some wrenching on that to get decent performance too. Mount a turbo (the 328 has forged internals) and you can really have some fun without the insurance companies being the wiser. :)
