Thinking of replacing the stock plastic one on my e36 m3 soon, and was wondering if an aftermarket aluminum one would make me illegal for B Stock (SCCA).

It'll bump you out of Stock. I don't know the Street Prepared rules well enough to be sure, but it may even take you straight to Street Modified.
