I have an Amsoil oil filter bypass kit. My question is, with the added oil capacity won't the dipstick still show full even if it's low on oil as the oil pan will still be full but it could be 2 quarts low. How can I tell if I'm low on oil?

Hmmm...I've never heard of these before, but I looked them up and learned.
I would think that the spin on bypass filter actually contains the majority of the excess oil, which is what provides the excess capacity compared to a stock filtration system. If that's the case, then the dipstick should actually accurately reflect the appropriate level of oil in your system.
Next time you change your oil, put in the recommended amount and see where the dipstick goes. Scribe a new mark. Use that as your new baseline for "enough."
