Hi there,
Most likely the engine was replaced because it is a 95 and the M60 V8s in 95 are what are known as "Nikosil" engines and did not hold up well when reacted with sulfer. '96 and after were M62 "Alusil" engines, so yours was probably replaced with the Alusil engine in 2000. As for the maintenance, there's a great thread that helped me a lot that's parked at the top of this forum titled "Thinking about a used E38? Here's what to look for." That should help with most questions you have regarding the car! If there is proper maintenance (and it can be PROVED it was done) these are great cars and I'm hoping for 250k at least out of mine! Maintenance on the V12 is more expensive than it would be on a V8 generally, so I can't really comment on that.

It's hard to tell what condition the car is in from the pictures, but running a check on KBB.com I got, for good condition, a price of about $8,000. For reference, I got my 99 750iL w/106k miles for $14,300. Hope this helps out! They are great cars. Have a good night.
