is there something wrong with running a 245/40'17 michelin pilot sport on 7.5" double spokes? i've seen it quite a few times, but i just wanted to make sure

I will respond even though this will be towed... it can be done, I suppose, it will just be very wide for the wheel. This would probably result in a somewhat mushy handling characteristic due to a lot of sidewall flex from the extra rubber.
