Wow, TL's are sweet for the track, if I didn't have to sell my bike, I'd be all over that one. V-twins are better for traction in a corner, the power pulses between the pistons are longer and each of those nano-seconds gives the tire more time to recover as it's on the edge of losing grip or not, compared to an inline four that has an almost constant output. V-twins also carry the majority of the engine weight down low in the frame making it easier on the front tire during turn in.

Why did they not use them in Superbike racing vs the GSXR1000's?

If you remember, they didn't start racing liter in-line fours until a few years ago. The reason being, the main racing class was 750cc fours against 1000cc v-twins. Honda had the RC-51 and ducati and aprilia both had liter v-twins(all 998cc). V-twins do not have the top end speed that fours do but, what they lack in all out speed, they make up for in torque and handling. It's also important to know that the racing v-twins are completely different than harley terds i.e. dohc, higher redlines, much more power and different block degrees. The TL was desinged to combat the ducati when it first started winning alot of races but, Suzuki kept the 750 as their main race bike like they always had and the TL did better on the street. The TL is one of the most balanced bikes I've ever ridden. With the mass of the engine so low in the bike, it falls into corners perfectly. The TL is also the best sounding bike ever.
