Charleston has tons of things to do. You definitely want to see the Battery area and go shopping at the old slave markets and in the general vicinity. Your fiance will especially appreciate that, although your wallet might not. Also, there is an old aircraft carrier, a new aquarium, Fort Sumter, cemetaries and museums and historic buildings galore. Bring a camera and some good walking shoes. Also, parking can be a biach so try to find a hotel downtown where you can walk everywhere.

Please note that Charleston, like any metropolitan area, has crime. Lots of street crime in the wrong areas at the wrong times. Just keep your eyes open and don't do stupid things you wouldn't do in Atlanta and you'll be fine.

You might check on the Spoleto festival as well. Not sure when it gets started but it should be soon.

And get some seafood. Charleston has some of the best seafood resturants, some VERY upscale and VERY VERY pricey. But yea, matt covered most of the stuff. Just watch your fiance shopping, your wallet will empty VERY fast.
