Just wondering if bleeding the brakes using a pressure bleeder in conjunction with the brake pedal (2 person) method is beneficial or damaging?

It's like having suspenders AND a belt at the same time. Racers rely on the time-tested pedal method because it reduces the risk of contaminating the fluid with pressurized air. You can just do one or the other, no need for both.

The key is to always use fresh fluid from an unopened container and go slowly. Do not push the pedal too fast or use too much pressure. Small crevices and cavities in the system may cause cavitation if the fluid flows too fast.

Modern ABS/traction control systems do trap old fluid, so you will probably have to cycle the ABS to get the old fluid circulated out. You can do this by bleeding, driving around and engaging the ABS a few times, then rebleeding. Or you can have a trained service tech bleed the system following the procedure as if they had just replaced the ABS pump

if you do the two-person method, then you certainly do not need to use a pressure bleeder.
