no way to have it as the default mode, you have to always put it on sport mode after you start the car, this is what I know by asking around.

depending on your car, I believe BMW car program it to your key, along with other settings, like climate control, mirror position etc etc,

That is not an option you can set on the "Car and Key Memory Settings" for the E65/E66.
