Is it OK to leave a car on a trailer, while the trailer is not hooked up to a tow vehicle?
I haven't seen people do this, so I'm guessing it is probably not a good idea.

It's fine. Just makes it real easy to steal your car.

The answer is yes, provided that the trailer is properly loaded. If you haven't got any tongue weight, then you could be in deep shit.
And yes, it makes it real easy to steal the car. It's really only recommended for times when you've got a loaded trailer and need to briefly use the truck for other things. (Like, say, dragging a friend's race car over to his trailer after the car has been parked on top of a tire wall.)

Makes it easy to steal your race car, and if your trailer is loaded towards the back too much, it can tip it to the back lol...not good.

If he's trailering with no tongue weight he has bigger issues than a tipped trailer.

Sure it's OK. People do it all the time when dropping the car off in the paddock the night before an event. Then using the tow vehicle to get to the motel, etc.
Just remember, if you decide to unload the car while the trailer is not connected to the tow vehicle you'll have to put something under each side of the rear of the trailer so it won't want to tip up as you back off.

And don't forget to chock the trailer tires.
Also, be sure that the post and its wheel can handle the tongue load. Otherwise, use jack stands.

Left mine loaded up a couple of weeks ago by the side of the road while I went into town to find a new tire to replace the blown one on the trailer. (I own a spare now.) Not a problem. I have a pretty light setup, but I doubt that it's a problem for any properly loaded rig.
I use a tongue lock (Bulldog, Gorilla, whatever make) to dissuade opportunistic theives from hitching up.
